Cellaring Guide

Cellaring Guide

We sat down this year with the legendary Jane Ferrari to taste through our library of our premium reds, from our first releases to our most recent vintage release, to enable us to put together an unbiased take on how long our wines should cellar for.

Our premium Eden Valley reds are primed for cellaring because they offer the key elements crucial for cellaring success, such as good concentration of tannins, in balance with good acidity and a solid fruit profile, delivering an overall complex yet elegant wine.

We will endeavour to review this guide periodically to keep it up to date here for you.

Please be aware that this is just a guide and not an assurance.

Our 'drink to' forecasts are based on the appropriate and correct cellaring of the wines. Remember these basic rules for proper wine cellaring:

  1. Maintain a constant cool cellar temperature in the 12-15 °C range.
  2. Maintain relative humidity in the 65–75% range.
  3. Protect wine from vibrations, light and odors.
  4. Lay cork bottles on their side to prevent the cork from drying out.

We also suggest you devise a system that lets you easily identify which bottles to go to first, and which to leave longer. Trev used to use a simple sticker dot system. A green dot on top of the cap or cork indicated drink now or over the next year or two / any kind of occasion. A blue dot indicated a wine of greater value, or one to be held for slightly longer / to be enjoyed on a special occasion. And a red dot meant don't touch for at least the next decade.

A general guide on what to expect from the other wines in our range (subject to specific vintage conditions each year) could be;

  • On Point Pinot Grigio - best enjoyed when young and fresh, consume within 2-3 years
  • Mackenzie William 1896 Riesling - up to 10-15 years
