The William Frederick Shiraz, our pinnacle wine, is made in strictly limited release numbers. With this wine we are delighted to deliver wine making excellence, most suited to your fine wine collection.

Named in honour of Trevor’s late father, William Frederick Harch (1910 – 1976), this cool climate single vineyard Eden Valley Shiraz is the pride of our vineyard – seamless and delicately crafted from only our finest parcels of fruit. Our single vineyard estate grown grapes are hand picked from 90 year old vines.

This vintage is due to be released around June 2020.


In 2016 we experienced a cool spring, much welcomed rains and an earlier start to summer in Eden Valley which allowed healthy bunch ripening.

Certainly, this was the ultimate start to creating our William Frederick Shiraz, followed by timely picking, then beginning fermentation as soon as possible in order to capture Mother Nature’s finest work.

Intended to last for decades when cellared, William Frederick opens with intense ruby colour, and a perfume of elegant red fruits, soft cocoa and fine white chocolate, that will carry on developing.

The palate structure is refined in delivery, first with the softest arrival of cranberry and raspberry, then mulberry and blackberry wave their way across the scene.

The essence of black forest comes into view, while all along, very fine and gentle savoury tannins have been outlining the entire show.

Upon release, two hours in a decanter will allow our big William Frederick to really open up and express its true nature. However our Eden Valley Shiraz will continue to develop further complexity across the next decade.
